Come dressed in white and red.<\/em><\/p>\n<h2>\u00c9cart, Saut and Cordier, the Rules of Course Landaise<\/h2>\n<p>The <strong>course landaise<\/strong> is built around two moves, the \u00e9cart (sidestep) and the saut (leap), performed in front of a cow known as the coursi\u00e8re. It is listed on France&#8217;s <a href=\"https:\/\/www.culture.gouv.fr\/thematiques\/patrimoine-culturel-immateriel\/le-patrimoine-culturel-immateriel\/l-inventaire-national-du-patrimoine-culturel-immateriel\">national inventory of intangible cultural heritage<\/a>. Three main performers share the arena:<\/p>\n<ul>\n<li><strong>The \u00e9carteur<\/strong> dodges the cow at the very last moment, recognisable by his embroidered bolero.<\/li>\n<li><strong>The sauteur<\/strong> leaps over the animal as it charges, dressed all in white.<\/li>\n<li><strong>The cordier<\/strong> holds the rope that guides the animal&#8217;s run.<\/li>\n<\/ul>\n<p><em>Practical info: a course landaise lasts 2 hours and features around ten cows facing a cuadrilla.
